"La construction d’une résidence contemporaine a permis la restauration du cellier roman des moines de Saint-Hilaire devenu un restaurant au cadre rare.
Pendant 17 ans, de 1986 à 2002, André Point a cuisiné en sous-sol rue Théophaste-Renaudot, « dans un site remarquable et exceptionnel », se rappelle aujourd'hui sans aucune nostalgie le chef chauvinois de l'Angélic caffé.
"?Un vrai coup de cœur?"
Sous les superbes voûtes romanes retombant sur quatre colonnes monolithes ornés de chapiteaux, le cellier de la chantrerie Saint-Hilaire est l'unique exemple poitevin d'un patrimoine roman des 11 eet 12 esiècle conservé sous une résidence moderne. Quand André Point y pose sa toque, il vient du Poitevin voisin et succède, dans ce cadre historique, à une première (et courte) expérience de restauration aux accents grecs. Guidé par l'esprit des lieux, il se positionne d'emblée dans un registre médiéval?: « tous les soirs, notre personnel était en tenue médiévale, l'éclairage se faisait principalement à la bougie, le mobilier avait été fait sur mesure, tout cela contribuait à faire de ce lieu un endroit unique ».
André Point aujourd'hui chauvinois, c'est Denys Colin qui préside depuis fin 2004 aux destinées du cellier rebaptisé Antipodes par ce cuisinier au passé de voyageur.
« Ce lieu a été un vrai coup de cœur pour moi, lorsque je suis venu visiter. J'ai dit au propriétaire "?quand est-ce qu'on signe???" seulement après avoir descendu quelques marches. »Bien qu'excentré, le restaurant attire les touristes venus visiter les monuments mais a aussi ses habitués poitevins. Comme son nom l'indique, la cuisine y est d'ici et d'ailleurs. Alors après l'exotisme des scampis à la planche sur une crème de pois chiches osez le retour au pays avec la grimolle aux fruits rouges. "
