Ursprünglich dienten die Speichergebäude der Lagerung des aus Lüneburg über die Alte Salzstraße und später über den Stecknitz - Kanal herbeigeführten und des aus der Saline Oldesloe gewonnenen und mit Lastkähnen auf der Trave herangebrachten Salzes.
Dieses Salz wurde von Lübeck als Grundlage seines damaligen Reichtums nach ganz Skandinavien ausgeführt. Vornehmlich wurde das Salz zum Konservieren von in Norwegen und Schonen gefangenen Fisch benötigt und ermöglichte so den Heringshandel als Fastenspeise mit dem Binnenland. Die Lage an der ältesten Lübecker Brücke, die sogenannte Holstentorbrücke markierte im Mittelalter die Grenze zwischen Seehafen und Binnenhafen, mit seiner Anbindung an die Elbe durch den Stecknitz - Kanal.
Die Lübecker Salzspeicher waren Drehort für den Film "Nosferatu - Eine Symphonie des Grauens" von Friedrich Wilhelm Murnau und dienten als Kulisse für das Haus, das der Vampir mietet. Heute werden die Lagerhäuser von einem Textilkaufhaus genutzt."
