Cora's has been through multiple incarnations, and they're at least 50 years old, their core recipes being the ones that were put on the table when they started. You're in Arizona, so forget the Tex-Mex, although there are some offerings where Tex-Mex overlaps with Southwestern cuisine, and you'll certainly find the latter here. You may need to bring your Spanish to interact with a few of the members of the staff, but the servers will take great care of you, and they've got a dry sense of humor.
They've got you covered for both breakfast and lunch. For breakfast, they've got plenty of egg dishes (including omelets) and pancakes, but unless you're fussy, try something a bit more regional like huevos rancheros, chilaquiles, chorizo, or machaca. They've got a variety of breakfast burritos, and if you've had a rough night, they offer both red and white menudo to get you moving again. For lunch, they've got burros (no "-ito" necessary, they're bigger!), tacos, enchiladas, tostadas, chimichangas, quesadillas, flautas, and sopas ("soup"). Beverages include coffee, tea, canned soda, lemonade, hot chocolate, orange juice, milk, and even horchata. They're going to feed you a lot, but if you plan to have room after your meal, they've got the old favorites like flan, sopapillas, and dessert chimichangas.
