Une jeune fille dénommée Florence, témoin de la constance de Thibéry (jeune garçon âgé de dix ans, fils d'Hélée, gouverneur romain d'Agde) et de Modeste (précepteur de Thibéry) dans les tourments pendant la persécution de l'empereur Dioclétien, se convertit immédiatement à la foi chrétienne et fut associée à leur martyre au début du IVe siècle, vers l'an 303. fis furent tous trois exécutés dans l'important village de Cessero, aujourd'hui Saint-Thibéry. Leur tombeau était connu et vénéré au Vine siècle, et sur son emplacement, Attilio, disciple et ami de Saint Benoît d'Aniane, fonda vers l'an 780 un monastère qui devait devenir une puissante abbaye bénédictine. Saint Modeste devint le patron de Bessan, et Sainte Florence aurait donné son nom à Florensac. Elle est fêtée le 10 novembre, avec Saint Thibéry et Saint Modeste.
Ses reliques ont été amenées à Palavas en 1899 du monastère des cisterciennes d'Agnani, en Italie Mr et Mme Rodolphe Faulquier s'y sont rendus avec l'abbé Pierre Laporte, curé de Palavas, à bord de leur yacht « jeanne Blanche ».
Written inside the church : "A young girl named Florence, a witness to the constancy of Thibery (a ten-year-old boy, son of Hélée, Roman governor of Agde) and Modeste (preceptor of Thibéry) in the torments during the persecution of Emperor Diocletian , Immediately converted to the Christian faith and was associated with their Martyrdom at the beginning of the fourth century, about the year 303. All three were executed in the important village of Cessero, now St. Thibery. Their tomb was known and venerated in the eighth century, and on its site Attilio, a disciple and friend of Saint Benedict of Aniane, founded a monastery around the year 780, which was to become a powerful Benedictine abbey. Saint Modeste became the patron of Bessan, and Sainte Florence gave his name to Florensac. It is celebrated on November 10, with Saint Thibéry and Saint Modeste.
His relics were brought to Palavas in 1899 from the Cistercian monastery of Agnani, Italy. Mr and Mrs Rodolphe Faulquier went there with Father Pierre Laporte, pastor of Palavas, aboard their yacht "Jeanne Blanche".
