The climbing wall at the REI on the LBJ Freeway in Dallas is open weekends and they do have belay staff available. 18 and under require a parent to stay with them, and everyone needs to sign a release.
They don't rent climbing equipment here -- if you want to climb the wall they provide it for your use. You can buy your own too, if you get hooked!!
