Pescatores is an excellent seafood restaurant in Victoria, BC. I spoke to the chef when we arrived and he told me that restaurants which have gluten in a lot of their entrees were not very progressive. He also said that while most of their menu items were naturally gluten free, they could easily tweak much of the rest to be gluten free as well. They are well-informed about what gluten is, what can contain it, and how to avoid cross-contamination. You get more than a safe meal here, the seafood is excellent with a long list of daily fresh offerings. The waitstaff is very careful and happy to check with the kitchen to make sure anything you order is gluten free. They have met the standards to be included on Canada's
Celiac Scene website.
