Una vez levantado el chopo noventa grados y falcado en su agujero, interviene el segundo elemento simbólico e imprescindible de la fiesta: Los pastorcillos. Se trata de un grupo de cinco a ocho niños que bailan delante del chopo y de la Virgen de los Desamparados haciendo gala de sus vestiduras. El pastor grande acostumbra a ser un hombre mayor, portador de un enorme garrote y de una alforja repleta de pan, que con un silbato en la boca dirige al grupo de niños.
