This school, which specializes in the culinary arts, began life as the New Haven Restaurant Institute in 1946. By the early 1950s, its name had become The Culinary Institute of America and by the early 1970s, it had moved to its current location, a former Jesuit novitiate located along the Hudson River near Hyde Park, New York. Since that time, it has branched out with campuses in Napa Valley, California, San Antonio, Texas and Singapore.

The book ‘1000 Places To See Before You Die’ deals with the New York campus which has five eating and/or drinking establishments open to the public where students can hone their skills serving actual meals to paying customers. These are the American Bounty Restaurant, the Ristorante Caterina de’ Medici (Italian), the Apple Pie Bakery Café, a brewery and the Bocuse Restaurant, named for famous French chef Paul Bocuse. (My 2007 edition of the 1000 places… book lists this as the Escoffier Restaurant, also named for a French chef, but the name was changed in 2012.)

My wife and I went to the Culinary Institute for our anniversary one year. We chose the French-themed Bocuse Restaurant and were not disappointed. I’m not one to take pictures of food but in this place, it just seemed like the right thing to do. The food was, of course, great and, as TV chef Gordon Ramsey might say, the presentation was stunning.

You can visit the campus at any time and guided tours are available, but since most folks come to eat, I’ve provided the website for the restaurants.
