The pastry was created in 1887 by Martin and Marie Sénéquier (he pastry chef in Cogolin and she in Tropézienne) who opened their shop Place aux Herbes, between the Notre-Dame-de-l'Assomption church and the port. Given the success of their business (especially soft nougat), they expand it by gradually buying the old boat garages facing the sea.

In 1930, Lisette Sénéquier decided to transform this huge space into a luxury café, in addition to the original pastry shop. In 1944, it was destroyed by the bombardments of the Second World War. It was rebuilt and reopened in 1951, notably with its 30-meter terrace with director's canvas chairs and triangular tables.

The café-pâtisserie was bought in 2012 by businessman Thierry Bourdoncle, already at the head of around twenty Parisian establishments. Sénéquier was briefly closed in February 2013 to undergo decoration work, carried out by interior designer Richard Lafond, in order to update the establishment (in a "vintage" style: old salvaged wooden floor, benches upholstered in light beige linen, wooden tables and armchairs in aged vintage leather, maritime lights, large patinated mirrors, etc.). Sénéquier est brièvement fermé en février 2013 pour faire l'objet de travaux de décoration, menés par l'architecte d'intérieur Richard Lafond, afin d'actualiser l'établissement (dans un style « vintage » : vieux plancher en bois de récupération, banquettes capitonnées de lin beige clair, tables en bois et fauteuils en cuir vintage vieillis, luminaires maritimes, grands miroirs patinés, etc.).
