C'est en 1874 que le confiseur d'origine suisse Léonard Parli fonde sa propre confiserie à Aix-en-Provence. Il opte pour un lieu moderne et pragmatique, près de la gare SNCF et de la casserie d'amande Brémond (maintenant disparue et remplacée par un gymnase).

Parli perfectionne la machine à fabriquer les calissons en 1875 puis, dans les années 1920, fit construire une nouvelle usine au style byzantin sur les lieux mêmes de la vente. On y remarque, sur le fronton, un écusson en pierre de taille représentant la croix suisse flanquée de deux rameaux, l'un représentant la Provence, l'autre le canton des Grisons d'où Parli lui-même est originaire.

Aujourd'hui, d'autres boutiques existent au pôle d'activité les Milles, à La Palette et près de la Cathédrale, lieu où j'ai pris les photos et que je présente.

Le Calisson
Le calisson (de la langue d’oc calissoun) est une confiserie faite d'une fine pâte de melon confit (ou d'autres fruits confits) et d'amandes broyés ensemble, nappée de glaçage royal et posée sur un fond de pain azyme. Cette friandise souvent parfumée à la fleur d'oranger et en forme de navette est une spécialité d'Aix-en-Provence depuis le xve siècle.

Dès 2002, le calisson d'Aix-en-Provence bénéficie d'une Indication géographique protégée (IGP). Pour en bénéficier le calisson doit être produit à Aix d'une part, et respecter la recette (cahier des charges) d'autre part.

La subtilité des lois internationales permet de fabriquer du calisson partout dans la monde mais il n'est pas "Calisson d'Aix en Provence" mais « Calisson de Provence - Tendre - Recette traditionnelle du calisson d'Aix », ou « Calisson de Provence - Tendre - Grande Tradition », ... et doit respecter la recette.

It was in 1874 that the Swiss-born confectioner Léonard Parli founded his own confectionery in Aix-en-Provence. He opted for a modern and pragmatic place, near the SNCF train station and the Brémond almond crusher (now no longer there and replaced by a gymnasium).

Parli perfected the calissons-making machine in 1875 and then, in the 1920s, had a new Byzantine-style factory built on the premises of the sale. We notice, on the pediment, a cut stone escutcheon representing the Swiss cross flanked by two branches, one representing Provence, the other the canton of Graubünden where Parli himself is from.

Today, other shops exist at the Les Milles activity center, at La Palette and near the Cathedral, where I took the photos and which I present.

The Calisson
Calisson (from the langue d'oc calissoun) is a confectionery made from a thin paste of candied melon (or other candied fruits) and almonds crushed together, topped with royal icing and placed on a base of unleavened bread . This candy, often scented with orange blossom and shaped like a shuttle, has been a specialty of Aix-en-Provence since the 15th century.

From 2002, the Aix-en-Provence calisson has benefited from a Protected Geographical Indication (IGP). To benefit from it, the calisson must be produced in Aix on the one hand, and respect the recipe (specifications) on the other hand.

The subtlety of international laws makes it possible to manufacture calisson anywhere in the world but it is not "Calisson d'Aix en Provence" but "Calisson de Provence - Tendre - Traditional recipe for calisson d'Aix", or "Calisson de Provence - Tendre - Grande Tradition ”, ... and must respect the recipe.
