This Authentic Japanese Noodle shop is located not far from the Markthal.
Its decoration is mainly functional and practical.
The noodle bar is run by Siang Hsia and his wife. These real Japanese prepare noodle soup according to an authentic Japanese recipe. The name Hinoki, a name spontaneously coined by Siang one morning, means Japanese Cypress.

If you order one of the traditional ramens at Hinoki, you will notice that at the first bite. The energy flows through your body and you feel Asterix after drinking the magic potion that makes it invincible. The soups are very tasty (especially if you take the miso variant) and the bowls are huge. If you want to eat some of the yummy side dishes (like the fantastic kimchi), you'd do well to ask for a small bowl. When you order the large bowl, sharing with your partner is not only a romantic, but also a very practical alternative. There are quite a few options on the menu. If you don't know exactly what you want to order, ask the friendly staff for help. Or take a gamble, as we did. The tan tan men, minced pork soup (and a pepper symbol) was hot, but certainly not too hot. The teriyaki miso ramen is a real friend to everyone.
In addition to all the ramen and side dishes such as edamame, gyoza and the aforementioned kimchi, Hinoki has recently also started with original Japanese soft drinks. Those are those brightly colored bottles with often very extreme flavors. The case is sparsely decorated in Japanese style. There is a traditional red Japanese banner (noren) and a few chalkboards that are nicely provided with the menu in both English and Japanese. The bowls that are postponed behind the counter are a nice contrast to the simple chairs and tables.
