As of Tuesday, April 21, there are more than 2,800 confirmed cases of the COVID-19 coronavirus in Oklahoma, and 164 people have died.

Despite the numbers, many businesses want to reopen. But reopening will bring several challenges once the stay-at-home orders are lifted.

Sunnyside Diner has shut down all four of its locations, with the Edmond location being closed for four weeks. You'd normally drive by and see people packed on the patio, and there are now plans to partially reopen.

"We had to stop for a moment, reevaluate and reassess the situation," Sunnyside Diner General Manager Chris Persechino said. "After sitting down and being able to reevaluate, we were able to find a way to bring in our employees who averaged 30 hours, thankfully."

Persechino told KOCO 5 that the Edmond location has been open for about a year. After four weeks of being closed, the diner plans to be open May 1 to serve breakfast and lunch.

"We are doing a thorough deep-down sanitization from top to bottom to make sure it's safe," Persechino said.

He said the inside of the diner will remain closed to customers, switching to an online menu and offering a new curbside service.

"We will be wearing goggles, face masks, never be more than six people (in) line in the building together," Persechino said. "Reinvigorated to get back to the restaurant, back to serving our community."

Edmond officials are working to determine when businesses can reopen. They said they will likely wait for Gov. Kevin Stitt's orders before doing so.
