After the administrative sequence, appraisals, insurance, rubble cleaning and decontamination, reconstruction began in mid-May. "We took the opportunity to change the organization of the workstations, less travel and fewer loads to carry," says the co-leader. Part of the equipment of the laboratory damaged by the smoke had to be replaced, the wood oven was also renovated. During these four months of work, the staff was laid off technically: "We have set up training courses, in collaboration with millers and professionals, to discover new things and also not to lose the hand. The teams returned to work last Thursday for two days of cleaning, then proceed with supplies and prepare for the restart of production.

Dans la partie magasin, des artisans peaufinent la finition des aménagements de la ligne de vente, qui a été entièrement refaite. Ce matin, l'équipe des quatorze salariés sera à pied d'œuvre pour accueillir de nouveau ses clients.

Funeste nuit du mardi 15 avril. Un incendie a ravagé le commerce. La partie magasin a été entièrement détruite, une toiture en grande partie tandis que le laboratoire était fortement endommagé. « Trop de dégâts pour parvenir à identifier formellement l'origine du sinistre », commente Arnaud Rey. Vraisemblablement un dysfonctionnement électrique, avaient alors évoqué les enquêteurs. L'assurance a couvert le coût du sinistre. Quatre mois plus tard, jour pour jour, le Fournil du Marais, boulangerie-pâtisserie, sandwicherie et traiteur, une entreprise créée en 1992 et reprise en 2008 par les deux jeunes associés – également propriétaires d'un second magasin à Saint-Liguaire – repart pour une troisième vie.
Passée la séquence administrative, expertises, assurances, le nettoyage des décombres et la décontamination, la reconstruction a démarré à la mi-mai. « Nous en avons profité pour modifier l'organisation des postes de travail, moins de déplacements et moins de charges à porter, »explique le co-dirigeant. Une partie du matériel du labo endommagée par la fumée a dû être remplacée, le four a bois a aussi été rénové. Durant ces quatre mois de travaux, le personnel a été mis en chômage technique?: « Nous en avons mis en place des formations, en collaboration avec des meuniers et professionnels du métier, afin de découvrir de nouvelles choses et aussi ne pas perdre la main. »Les équipes ont repris le travail dès jeudi dernier pour deux jours de nettoyage, puis procéder aux approvisionnements et préparer le redémarrage de la production."
