The medieval town, which lies on the pilgrimage route to Santiago de Compostela, is well preserved. William of Gellone has founded the abbey in the year 804. Therefore, the municipality was called Gellone in the Middle Ages. As builder of the monastery is considered Duke William of Aquitaine and Toulouse (Guilhem de Toulouse) called "short-nose", a grandson of Charles Martel.
Soon after his death, Wilhelm was highly revered and his grave is to the present day an important stage of pilgrims on the Via Tolosana, one of the French sections of the pilgrimage to Santiago de Compostela.
With the canonization Wilhelm in 1066 and the consequent increase in the pilgrims to his grave Gellone became known under its new name "Saint-Guilhem-le-Désert". Since 1998 it is awarded as part of the World Heritage Site "Camino de Santiago in France".
