The Grey Mare as a pub name is usually only found in the north, a more common name across the country is The White Horse.
True white or grey horses are very rare and they are usually born with black hair. Over time they start to have a mixture of black and white hair and then appear to be grey, and in old age may turn white, but are still usually a grey colour.
Quite often the name has a heraldic significance, but I don’t know of one in this case.
The pub got a new landlord during 2011, and this new sign. I don’t know exactly when it changed but it was sometime after June because there is a picture on Flickr showing the old sign.
