Beer should have only four ingredients. Water, yeast, hops and malted barley. The maltster is responsible for turning the raw barley into a product suitable for brewing. Firstly barley is sprouted. During this process it is traditionally spread out a couple of inches deep across the floor of the malt house. In order to ensure that it sprouts evenly the maltster would regularly turn the grains over. Nowadays this is done mechanically, but traditionally it would have been done by hand using a wooden shovel although it looks as though this may be a metal one shown on this sign.
