The Cock is one of Hitchin's oldest pubs, but it has rather a disappointing sign. There can be no mistake that you have found The Cock, but the sign has a definite feel of 'painting by numbers' about it. The artists name is not on the sign.
It is probable, where you find a pub called The Cock, that cock fighting went on in the yard or even inside if there was a cock pit.
15/01/11. I noticed that this pub has a second sign, and one I like better, up a side ally. That will now be the main picture.
