The pub, on Bakehouse Hill near to Darlington Market, is in a building that was originally a community bakery.

People could bring their own homemade pies and cakes etc and have them baked in the baker's ovens.

Presumably the scales would be used to weigh the produce and calculate the charge for baking the produce.

A Pennyweight was also an old unit of measure for weights and in the Middle ages a penny coin weighed 1 pennyweight.

The pub was refurbished in 2022, and interestingly the pub's website shows a picture of the pub with a different sign. On this picture the pennyweight scales depicted are the more recognisable balance scales. link
