Le théâtre Gabrielle-Dorziat de style Louis XV et construit en 1898, est décoré par de très grands artistes. Il est baptisé du nom de la comédienne sparnacienne Gabrielle Dorziat et est inscrit au titre des monuments historiques.
En 1898, le Conseil municipal d'Epernay décide de construire un nouveau théâtre de 850 places sur l'actuelle place Mendès-France. Le 5 décembre 1900, la première pierre est posée sous les ordres de l'architecte Stanilas Loison, également concepteur des théâtres de Tours et de Cherbourg.
D'autres artistes participent à la décoration comme le sculpteur Georges Trugard ou Georges Clairin, peintre officiel de la Belle-Epoque et décorateur de l'Opéra Garnier. Joseph Ascoli, sculpteur sparnacien, décore le fronton supérieur de la façade avec son œuvre "La vigne champenoise inspirant l'Art théâtral". Le théâtre est inauguré le 18 octobre 1902 avec la représentation d'un opéra-comique.
Magnifique théâtre à l'italienne de style Louis XV le théâtre subit un incendie en 1915, puis les bombardements de 1918. Lors de la Seconde Guerre mondiale, il est le noyau de résistance des occupants à la libération de la ville.
Le 30 novembre 1987, le théâtre prend le nom de Gabrielle Dorziat pour honorer la célèbre comédienne sparnacienne. Née en 1880 à Epernay, Gabrielle Dorziat - de son vrai nom Gabrielle Sigrist - commence une carrière au théâtre en 1920 avant de devenir une vedette de cinéma en 1936.

In 1898, the Municipal Council of Epernay decided to build a new theater with 850 seats on the present Place Mendès-France. On December 5, 1900, the first stone was placed under the orders of the architect Stanilas Loison, also designer of the theaters of Tours and Cherbourg.
