"Le troisième niveau du donjon abrite le pigeonnier couvert de son toit conique surmonté d'un lanterneau. Au centre de cette pièce circulaire, un pilier central de huit mètres soutient tout l'édifice jusqu'à la toiture. Dans le mur sont percés 2 500 nids de pigeons. L'importance du pigeonnier est fonction du rang du propriétaire. Les œufs et la fiente des pigeons, servant à l'engrais, constituent un revenu. Ces oiseaux ont toujours été un grand souci pour les paysans. Dans les cahiers de doléances de 1789, la principale demande des habitants est d'enfermer les volatiles pendant les périodes de semailles et de moissons." (
