"Der älteste Teil im Südosttrakt, in dem sich heute das Domschatzmuseum befindet, stammt noch aus der Bauzeit des Vorläuferbaus des Regensburger Doms. Ebenso liegen die Ursprünge der gleichnamigen Brauerei Bischofshof beim Dombau, da von ihr das Bier für die Dombauleute gebraut wurde. Seine bauliche Vollendung fand der Bischofshof in den 1560er Jahren unter Bischof David Kölderer von Ringstall (1567–79). Der Bischofshof diente auch den Teilnehmern des Immerwährenden Reichstags als Herberge. 1810 wurde der Bischofshof säkularisiert und verkauft. 1852 kam das Gebäude wieder zurück in kirchlichen Besitz. Seither sind Gaststättenbetrieb und Brauerei hier ansässig. Die Produktionsanlagen wurden 1910 in den Westen der Stadt ausgelagert."
