"A l’angle sud-est du rempart antique, la tour des Mourgues demeure l’élément le plus visible et le mieux conservé des tours circulaires dont l’enceinte était flanquée.
Elle tient son nom des moniales (mourgues), du monastère que l’évêque Césaire fonda à proximité, au début du VIe siècle, et dont subsiste, toute proche, l'église Saint-Blaise.
Elle nous renseigne, par sa structure, sur les modifications que le rempart a pu subir, de la fonction prestigieuse et ostentatoire ayant présidé à son édification, aux impératifs de défense que la ville connaîtra par la suite." (
