The History of Blue Springs Cafe
So many travelers would arrive to Diamond Mineral Springs in Grantfork, IL and would explain how difficult it was to find our restaurant. Repeatedly they would tell us, " if only if there was an exit off of I-70 at highway 160".
In the fall of 1992, Brad and Vanessa decided to remedy the problem by purchasing an old Stuckey's off of Exit 30 on I-70. Together with Dale and Tammy Siever (Vanessa's sister), they would launch a sister restaurant to Diamond Mineral Springs that would allow those travelers to easily hop off the road in order to enjoy our same desserts and food which they had grown to love.
