Aujourd'hui, grâce au travail d’Alain Madec, c'est à la 5ème génération que revient l’honneur d’entretenir ce patrimoine familial constitué contre vents et marées, et d’y apporter sa sensibilité et sa signature.Les parcs ostréicoles de PRAT-AR-COUM sont installés sur la Pointe de Pen Al Lann à Carantec au cœur de la baie de Morlaix qui abrite près de 700 hectares de concessions.
Le métier d’ostréiculteur s’exerce au rythme des saisons, nécessitant du temps, de la patience et beaucoup de travail. Été comme hiver, l'ostreiculteur doit s’acquitter une somme quotidienne de manipulations et faire preuve d’une vigilance incessante tout au long des cycles de croissance et de reproduction.
Du captage à l’élevage et de l’élevage à l’affinage, l’huître exigent des années de soins constants. Si l’huître peut être récoltée dès l’âge de 2 ans, elle peut néanmoins rester en élevage jusqu’à 3 voire 4 ans avant de devenir l’ambassadrice de la gastronomie bretonne en France et à l’étranger.
La presqu'île de Carantec est un terroir tout à fait particulier qui constitue un abri idéal pour l'élevage des huîtres qui y trouvent un milieu particulièrement favorable. Le jeu des marées, mêlant le sel, l'iode de la mer à l'eau douce favorise la production d’huîtres huîtres charnues au goût iodé dans un milieu exceptionnel riche en phytoplanctons. Il n’est donc pas étonnant que Carantec soit reconnu comme premier centre ostréicole du Finistère avec une production de plus de 6000 tonnes d'huîtres chaque année."

The profession of oyster farmer is practiced at the rhythm of the seasons, requiring time, patience and a lot of work. Both summer and winter, the oyster farmer must pay a daily amount of manipulation and be vigilant throughout the growth and reproduction cycles.
From catch to rearing and from rearing to maturing, oysters require years of constant care. If the oyster can be harvested at the age of 2, it can nevertheless remain in breeding until 3 or 4 years before becoming the ambassador of Breton gastronomy in France and abroad.
The peninsula of Carantec is a very special soil which constitutes an ideal shelter for the breeding of oysters which find a particularly favorable environment. The tides, mixing salt and iodine from the sea with fresh water, promote the production of iodized oyster oysters in an exceptional environment rich in phytoplankton. It is therefore not surprising that Carantec is recognized as the first oyster farm in Finistère with a production of more than 6000 tonnes of oysters each year. "
