Why am I being advised to watch for tortosies with no gas -- and with a flasling light no less, in the middle of the Mojave Desert?

What are the tortoises eating (or not eating) that make non-flatulent turtles so dadgum dangerous?

This sign is located just a few dozen yards east of the monument sign for the Mojave National Preserve on Kelbaker Road.
