First opened in 1963, this Llano location of Cooper's is the original of a chain of (at time of posting) four BBQ joints owned by the Wootan family.

The current owner, Terry Wootan, worked there in high school, and eventually took over Cooper's in 1986.
Cooper's barbecue is Cowboy style/West Texas style - Cooked over direct heat using mesquite coals, rather than the low and slow method typically associated with barbecue. Wikipedia article on Barbecue in Texas cites Cooper's as the most famous example of West Texas style, even though it's located in Central Texas. (

Made the list of 50 Top BBQ in Texas Monthly in 2013.
They say, "...an intrepid old-timer, a barbecue stalwart that has appeared on every single one of these lists."
Meats include Brisket, sirloin steak, port chops, beef and pork ribs, cabrito, chicken, turkey, sausage. Sides include jalapeno mac & cheese, beans, corn on the cob, cole slaw, potato salad, and whole baked potatoes. Desserts include cobblers: apple, blackberry, peach, and pecan.
Ordering starts outside, as patrons walk past the huge grills and choose their meat(s). Customers then proceed inside to choose sides and desserts and pay. Seating is family style on indoor picnic tables.
