It all started way back in 1995. After traveling the South and Midwest, Uncle Willie decided to bring real, wood-smoked, pit bbq to CT. In these here parts, some folks think barbecue means cookin' on a grill. Once y'all try our barbecue, y'all know that barbecue is a noun, not a verb - m'kay?
We took a little bit from every region that we traveled, and created BBQ even the South would be proud of. We rub all of our meat with a secret rub before slowly smoking it to perfection. Y'all surely notice a wonderful pink smoke ring that only comes from real wood smoke. You can then add the sauce of your likin'. Uncle Willie makes a variety of sauces including: Memphis Classic Sweet, Carolina Mustard, Wichita Falls Hot, and Lexington Vinegar.
No big secret to our big following. We use only top quality meats, and we actually make everything from our own secret recipes- no frozen stuff here! We're true believers in Southern Hospitality.
