This restaurant was a treat, because German restaurants are not so common in the USA and most of them do not offer anything gluten free. Gustav's has many, many Gluten Free offerings. The staff is trained about gluten and the care that needs to be taken to avoid cross-contamination. The red cabbage is delicious!
