This press is tucked into a corner of the yard of the Old Pulaski County Courthouse and Museum (built in 1903), and probably overlooked by most passer-by. The small plaque identifies the devise as a molasses press.
Molasses is made of sugar cane stalks and sulfur dioxide (a preservative) and LOTS of cooking. Mature, ripe sugar canes are harvested, the leaves removed, and the cane is then crushed in the press, and the juice extracted during that process. The juice is boiled until concentrated.
The press is stamped "1844".
