Trees are often used as pub names. There may be a number of reasons for this.

Where there is a pub naming a particular tree in it's name, it may be because there was a significant tree of that type locally that was used as a landmark, a boundary marker or perhaps as a place where a preacher might have regularly delivered a sermon from.

This is a modern pub without an obvious reason for the name.

Fraxinus excelsior is a tree mentioned in Norse mythology, a mythological ash tree called Yggdrasil marked the centre of the world. Its roots were anchored in the abyss of the underworld, and watered by the streams of wisdom and faith. Its trunk was supported by the earth, while its crown touched the arc of heaven. This is a Weatherspoons pub.
