The Brown Palace Hotel has two griffins emblazoned on each window cover around the hotel and two more griffins with swords in stained glass over the doorway. I was unable to discover why the griffin is used as a symbol, but I believe it is the griffin's legendary strength to guard treasure - as each guest would be protected by the griffins.
