A festival held annually in Las Cruces, New Mexico, during the last (full) weekend of September to celebrate the making of the world's largest enchilada.

Each year, Robert V. Estrada (of Roberto's restaurant) makes the world's largest enchilada. Everything for the enchilada is prepared at the fiesta, allowing it to be watched. Free samples of the enchilada is served after it's cooked.
A new attraction in 2007 was the creation of the "Whole Ensalada," a giant organic salad (made by Mountain View Market, a local co-op), which is also prepared in front of the crowd and served after.
Other activities include carnival rides, food, music (with several music stages), a beer garden, and a variety of other vendors.

The Whole Enchilada Fiesta, in the past, has been located in the Las Cruces Downtown Mall. Because of the downtown renovation project, the event was moved to the Meercheidt Recreation Center on Hadley Avenue, between Solano and Walnut.
