In 1935 the Dauwalder family from Switzerland purchased the Bunker Hill Cheese Company (Heini's). What makes Heini's different from any other cheese making plant is that Heini's cheeses are all produced in Ohio ’s Amish Country. HEINI’S Cheese is locally produced using manufacturing processes that were developed many years ago, using
100% Amish farm milk. Years ago the Dauwalder family made a commitment to produce all HEINI’S Cheeses with 100% Amish Farm Milk from the local community.
This milk is purchased from over 270 Amish Farms located throughout the local area. These are typically small family farms with an average herd size of 8-10 cows.
Amish farm milk purchased to be used in the making of HEINI’S CHEESE is certified to be Artificial Growth Hormone Free.
The Amish farmers that supply the cheese plant still bring their milk in the old traditional milk cans like their forefathers did. You can see them sitting outside the plant on the loading area. You will also see the Amish families in their buggies picking up cream from the plant to make their own butter and dropping off their products.
Heini's has a 100-foot viewing window that allows you to see the cheese-making process inside the facility. You will see Amish men with beard nets working throughout the process.
There is an area to buy all kinds of cheeses and fudge, hand-dipped ice cream, farm fresh eggs and other products. You can also shop their gift shop and get Amish made crafts that are exclusive to Heini's.
The Chalet is open 9-5 but they work on the "early to bed, early to rise" format and suggest you visit before lunch if you want to see the cheese-making process, although there is a video you can view on the website and at the Chalet that takes you through the cheese-making process. They also let you know that production times can vary due to the times milk is brought in from the farms.
