La historia de Pastelerías Isla arranca en 1897, cuando Ceferino Isla González decide abrir su propio obrador en la Calle Real de Santa Fe, donde se encuentra actualmente, con el nombre de La Favorita.
A lo largo de la historia, Ceferino Isla cultiva grandes logros hasta conseguir que La Favorita sea una parada obligada para los viajeros de la época.
El más especial fue el Rey Alfonso XIII, que en 1916, en una visita a Láchar, le dan a merendar piononos y queda impresionado por su sabor. Su majestad concede a Pastelerías Isla el título de Proveedor oficial de la Real Casa, que justifica que su escudo cuente con la corona real de cinco puntas.
La estatua en homenaje a D. Ceferino, obra de D. Miguel Moreno Romera, realizada en 1999, en fundición en bronce a la cera perdida, está situada en la calle Real de Santa Fe, en una placita pequeña y bastante cerca del edificio donde aún se encuentra la pastelería que dió origen el primer obrador. Sobre la columna que la sostiene una placa rea el siguiente texto:
