"Doña Micaela, apodada cariñosamente La Colchona, se dedicaba en los meses invernales a realizar las matanzas del cerdo en las casas más señoriales de Estepa, utilizando el sobrante de manteca para hacer los conocidos como «mantecate» (parecidos a los mantecados de hoy en día).

Estos «mantecates» tenían muy poca durabilidad, se endurecían muy pronto, entonces para evitar eso Micaela reseca la harina dándole calor, quitándole la humedad. Consiguiendo con ello que el producto quedara prieto por fuera y tierno por dentro. Las modificaciones introducidas dieron lugar a un producto de gran prestigio y reconocimiento en el gremio pastelero.

Desde entonces cinco generaciones han perpetuado hasta nuestros días, al margen de modas, aquellas formulas clásicas –mantecados, polvorones, roscos de vino, chocolates, alfajorillos y otros dulces de Navidad.

"Doña Micaela, affectionately nicknamed La Colchona, dedicated herself in the winter months to slaughtering pigs in the most stately houses of Estepa, using the leftover lard to make what was known as "mantecate" (similar to the mantecados of today in day).

These "mantecates" had very little durability, they hardened very quickly, so to avoid that Micaela dried the flour by giving it heat, removing the moisture. This ensures that the product is tight on the outside and tender on the inside. The modifications introduced gave rise to a product of great prestige and recognition in the pastry industry.

Since then, five generations have perpetuated to this day, regardless of fashion, those classic formulas – mantecados, Polvorones, wine roscos, chocolates, alfajorillos and other Christmas sweets.
