Lindores Abbey was a Tironensian Abbey built in 1191 on the edge of the Fife town of Newburgh and would become known for the monks there distilling rose water until it was sacked and largely left to ruin in 1559. It is widely known that the first reference to Aqua Vitae, Scotch Whisky came here in 1494, when Brother John Cor was commissioned by King James IV for 8 bolls of malt, the equivalent of 400 bottles of whisky today.
The distillery opened in 2017 across the road from the abbey ruins to continue where the monks stopped over 500 years ago, with its single malt Lindores Abbey Whisky. The barley for the distillery is locally sourced in nearby fields, and there are four boreholes at the distillery, Abbot's, Monk's, Bluidy, and Witches.
The distillery is open from 10.00am to 4.00pm and there are tours throughout the day. The distillery lies east of the town on the south side of Abbey Road.
