Cider: The pressed fermented juice of apples
Grinding & Pressing: The apples are reduced by the mill to a uniform mass by being crushed by rollers and toothed cylinders. The pulp was then transferred to the pressing container; here the pulp had the last of the juice pressed out. This operation should be deferred till December if possible. The weather should be cold even slightly frosty.
Fermentation, after the mass is pressed it is run into casks a process known as distillation occurs and strong fermented cider called cider brandy or Apple Jack is produced containing a large percentage of alcohol. A type of vinegar is also made from cider.
