Reypenaer rijpt in een historisch kaaspakhuis uit 1906 in Woerden. Door het bijzondere microklimaat dat in de loop van de tijd in het oude kaaspakhuis is ontstaan en de natuurlijke wisselingen van temperatuur en luchtvochtigheid, ontstaat de bijzonder mooie smaak. Reypenaer is verkrijgbaar in drie leeftijden:
de Reypenaer 1-jaar, een volle complexe en geconcentreerde smaak die toch zacht is, driemaal Supreme Champion in Nantwich;
de Reypenaer V.S.O.P. wordt 2 jaar gerijpt en heeft enorm veel smaak, is donkerder van kleur met verrassende mineraalkristallen, gebruikt voor veel toepassingen in de gastronomie;
de Reypenaer X.O. Reserve is het summum van de Reypenaer kazen, wordt van alleen zomermelk gemaakt en is beperkt verkrijgbaar.

Ook is het mogelijk een kaasproeverij te volgen in het historisch kaaspakhuis in Woerden, samen met een rondleiding. Dit is alleen mogelijk voor groepen van minimaal 10 personen. Je krijgt een rondleiding in het oude pakhuis en kunt ervaren hoe het oude vak van kaasmeester wordt uitgeoefend. Het poetsen en keren van de kazen, het luiken openen en sluiten, het beoordelen van de kaas. Informatie over de invloed van het weer, het microklimaat in het oude pakhuis, de invloed van de Oude Rijn en nog veel meer. Aansluitend kun je deelnemen aan een kaasproeverij.

Reypenaer ripens in a historic cheese warehouse from 1906 in Woerden. Due to the special microclimate that has developed over time in the old cheese warehouse and the natural changes in temperature and humidity, the particularly beautiful taste is created. Reypenaer is available in three ages:

It is also possible to follow a cheese tasting in the historic cheese warehouse in Woerden, together with a guided tour. This is only possible for groups of at least 10 people. You get a tour of the old warehouse and can experience how the old profession of cheese master is practiced. Cleaning and turning the cheeses, opening and closing shutters, assessing the cheese. Information about the influence of the weather, the microclimate in the old warehouse, the influence of the Oude Rijn and much more. Afterwards you can participate in a cheese tasting.
