"Ramatuelle est un petit village touristique planté au coeur de la presqu'île de Saint-Tropez.
Le site des moulins de Paillas se trouve sur la colline qui domine le village. On peut y monter à pieds ; mais aussi en voiture : pour cela, il faut se rendre au centre du village dans la rue de la mairie et continuer celle-ci en montant vers la colline en direction de Gassin. Cette petite route s'élève tranquillement vers le sud puis vers le nord sur moins de deux kilomètres, et finit par déboucher sur une zone dégagée où trône fièrement le seul moulin restauré du site.
Il existait jadis cinq moulins posés sur cette crête offerte aux vents. Seul un moulin a été ressuscité en 2002. On le découvre aujourd'hui tel qu'il devait être au XIXè s. lorsqu'il a été érigé.
Les autres moulins - aujourd'hui disparus ou en ruines - ont été construits entre le XVIè et le XIXè s. et ont cessé de fonctionner à la fin du XIXè s., concurrencés par les minoteries.
Pleinement opérationnel, sa mécanique est entièrement en bois, renforcée par quelques parties en fer aux endroits les plus sensibles. Comme la plupart des moulins provençaux, sa partie supérieure pivote pour s'orienter au mieux en fonction de la direction du vent.
Paillas était le nom d'un meunier qui utilisait le moulin. L'office du tourisme de Ramatuelle organise des visites du moulin d'avril à octobre tous les mardis matin. "
