"The Public Cannery was designed and built between 1938 and 1939 by Brenham resident Alex Griffin, with assistance from the Works Progress Administration. This building served as a public cannery during the late 1930s and early 1940s, and offered a facility in which local citizens could bring their own fruits and vegetables for canning. According to local informants Harold Pfluhaupt and Jack Griffin, canned goods and proceeds were given to welfare families.

The Public Cannery is a one-story, rectangular plan building. The walls are constructed of load-bearing masonry arranged in a random rubble pattern. Kitchen facilities are located at the east end of the building."
