Types of wines: Red Garnet (Cynthiana Grape) Dark, full-bodied wine with flavors of plums and cherries.
Ambrosia (Steuben Grape) Blue, black grape which is crushed and by pressing off the juice after a few hours gives the wine a beautiful pink color with a beautiful spicy aroma and floral overtones. It has large berries that are very sweet, spicy, and full of flavor with hints of cranberry and honey. Steuben is a perfect match with Muenster cheese and can be served with smoked meats, Chinese food, turkey, ham and game meats. Many people traditionally serve Steuben with their Thanksgiving meal.
Red Cyn (Cynthiana Grape) Also know as Norton. Vigorous plants bear small, flavorful grapes. Ripens in late August to early September, makes deeply pigmented wine. We grow 2 acres of this grape here in Jackson and it will make a sweet or dry wine. This is a special grape winning international acclaim in the 1890’s throughout the world as the best wine in the world.
Niagara (Niagara Grape) A white Native American grape, Niagara has an intense grape flavor and aroma often described as wild and musky.. Niagara is great served cold with or without food. It stands up well to strong flavored dishes and strong cheeses. Niagara is a large amber colored grape and it may be somewhat egg shaped. Not as sweet as most other varieties
Tennessee Peach (Niagara and Peach) A crisp, fruity wine with the rich aroma of tree ripened peaches .
Muscadine (Muscadine Grape) The Muscadine grape is native to the southeastern United States Muscadine are well adapted to the warm, humid conditions of the southeastern U.S., where the American and the European grape do not prosper. The muscadine fruit is borne in small, loose clusters of 3-40 grapes In color the fruits range from greenish bronze through bronze, pinkish red, purple and almost black. Sugar content varies from about 16% to 25% for the sweetest cultivars. The wild fruits and some older cultivars have a musky quality similar to American grapes, although not as pronounced. Most people remember their grandparents or uncles and aunts making wine or jam with muscadine.
Raspberry Rapture (Vidal Blanc and Raspberry) This wine is a Vidal Blanc grape blended with raspberry. The Vidal Blanc grape is a French-hybrid producing large clusters of thick-skinned berries with fruity floral characteristics. This wine is similar to the Tennessee Wilderberry in flavor especially with the raspberry after taste.
Perry (Pear) Pliny the Elder, writing in the years just after Christ, was a great fan of pear wine. In Roman times, this drink was called "Castomoniale" and was one of the most popular alcohol drinks around. This wine style became a great favorite in Paris in the 1400s. There is even a specific name given to pear wine - this is, of course, "perry". The drink became so popular that the coat of arms for Worcestershire showed 3 pear trees on it. Pear wine can be one of the most delicious wines you'll taste, and goes very well with cheese and light dishes.
