In 1395 gaf het stadsbestuur van Gouda nauwkeurige richtlijnen voor de ordening van de Goudse markten. De botermarkt bevond zich ten oosten van het stadhuis, de koemarkt ten westen. Begin 1400 schijnen er in Gouda al verschillende vee- en kaasmarkten te zijn geweest. In een groot gebied rondom Gouda was de melkveehouderij de voornaamste bron van bestaan. Dit had te maken met de veengrond, die beperkingen oplegde aan mogelijke toepassingen. Gouda werd het centrum van een groot veeteeltgebied. Vele duizenden kilo’s zuivel (en vee) werden jaarlijks op de Goudse markten verhandeld. Hierdoor én door de gunstige handelsligging van Gouda aan de IJssel en Gouwe, als doorvoerhaven tussen Rotterdam en Amsterdam ontwikkelde Gouda zich al vroeg tot een regionaal centrum van onder andere handel in zuivelproducten. Dit is in het huidige stadsbeeld nog terug te zien aan de overgebleven kaaspakhuizen. De Goudse kaas stond bekend om zijn lange houdbaarheid en voortreffelijke smaak.
Tegenwoordig worden er in de zomermaanden in Gouda nog steeds kaasmarkten gehouden met onder andere de bekende Goudse kaasmeisjes en kaasbrikken voortgetrokken door paarden. De Gouda Kaasmarkt is een spectaculair historisch en nostalgisch tafereel voor toeristen. Bezoekers kunnen tijdens de kaasmarkten zien hoe kaas in de Waag gewogen wordt.
Het historische pand van De Goudse Waag stamt uit 1668. Hier werden vroeger de beroemde Goudse kazen gewogen. Tegenwoordig is het een museum, waar bezoekers alles over de iconische Goudse kaas en de historie van de stad kunnen vinden. Oude ambachten komen hier regelmatig tot leven in demonstraties. Het maken van Goudse kaarsen, pijpen, aardewerk en natuurlijk kaas. Ook worden er rondleidingen met een gids verzorgt.
Er is een museumwinkel op de begane grond waar alles wat met kaas te maken heeft verkocht word: van stukken kaas, kaasschaven tot souvenirs.

In 1395 the city council of Gouda gave precise guidelines for the organization of the Gouda markets. The butter market was to the east of the town hall, the cow market to the west. In the early 1400s, there seem to have been several cattle and cheese markets in Gouda. In a large area around Gouda, dairy farming was the main source of livelihood. This had to do with the peat soil, which imposed restrictions on possible applications. Gouda became the center of a large cattle breeding area. Many thousands of kilos of dairy (and cattle) were traded annually on the Gouda markets. Because of this and the favorable trade location of Gouda aan de IJssel and Gouwe, as a transit port between Rotterdam and Amsterdam, Gouda developed at an early stage into a regional center of trade in dairy products, among other things. This can still be seen in the current cityscape in the remaining cheese warehouses. Gouda cheese was known for its long shelf life and excellent taste.
Today, cheese markets are still held in Gouda during the summer months, including the famous Gouda cheese girls and cheese bricks pulled by horses. The Gouda Cheese Market is a spectacular historical and nostalgic scene for tourists. During the cheese markets, visitors can see how cheese is weighed in the Waag.
The historic building of De Goudse Waag dates from 1668. The famous Gouda cheeses used to be weighed here. Today it is a museum, where visitors can find everything about the iconic Gouda cheese and the history of the city. Old crafts regularly come to life in demonstrations here. Making Gouda candles, pipes, pottery and of course cheese. Guided tours are also provided.
There is a museum shop on the ground floor where everything related to cheese is sold: from pieces of cheese, cheese slicers to souvenirs.
