The picture of the head is extremely realistic, rather than some pub signs with this name that use simplistic images.

The pub name bulls head is extremely common especially in rural areas.

The village of Castleton is in the Peak District National Park in the Pennines. The farms in this area are predominantly sheep or cattle farms rather than arable farms and so the name is appropriate for a pub in this area.
