Wohnzimmer der Filmszene, Speisesaal der Politiker: Ins Borchardt geht man, um sich zu zeigen und dabei zu sein – auch wenn manch einer behauptet, es sei wegen des – wirklich guten – Wiener Schnitzels.
Das Borchardt in der Französischen Straße 47 ist ein Ort, an dem Berlin international, kreativ, weltmännisch wirkt. Teller klappern, Gläser klirren. Stimmengewirr und Lacher. Kein Restaurant in der Hauptstadt, in dem sie dichter beieinander sind: Gespräche von weltpolitischer Bedeutung, in Worte gefasste Ideen von Künstlern und Autoren, Flirts, Geplänkel. Verstecken kann man sich hier nicht. Eine Bühne will das Borchardt dennoch nicht sein. Das vermutlich wichtigste Restaurant der Berliner Republik, will ein ganz normales Lokal sein.
Borchardt Berlin: Kein Hummer, sondern Wiener Schnitzel
Das jedenfalls betont der Wirt Roland Mary immer wieder. Und wer jemals in seinem Lokal war, weiß, was Roland Mary meint. Er, der Tausendsassa-Gastronom, versteht, was das Besondere an der Berliner Gesellschaft ist: Sie ist kreativ, sie mag es schick, aber sie ist auch bunt, schillernd, schräg und von weit weniger Ressentiments und Snobismus geplagt als etwa die Münchener Schickeria oder die Hamburger Oberschicht.
Im Borchardts fließt auch Champagner, hier isst man gut. Aber was die Küche mit der zweiseitigen Speisekarte berühmt gemacht hat, sind nicht Austern oder Hummer, sondern das Wiener Schnitzel mit warmem Kartoffelsalat. Mary selbst ist übrigens kein Schnitzel-Freund: „Schnitzel gehörte nie zu meinen Leibspeisen“, verkündete er jüngst in der Bild-Zeitung.
Gut zu wissen: Das Essen im Borchardt kostet nicht die Welt. Schon für rund 25 Euro kann man satt werden.
"Jeder hat etwas auszusetzen, aber alle rennen hin"
Thomas Gottschalk verglich einst in der Bild-Zeitung das Borchardt mit McDonald's. Das war nicht böse gemeint, sondern als Metapher für einen Ort, an dem "jeder irgendwas auszusetzen hat, aber alle rennen hin". Er jedenfalls gehört zu den Stammgästen. Eigentlich wollte er sich vom Promi-Trubel der Hauptstadt fernhalten. Jetzt kann er nicht mehr ohne. "Ich sitze zweimal die Woche da", verlautete er in der Bild-Zeitung, "und treffe Leute, die offensichtlich fünfmal die Woche da sind, denn ich gehe immer an anderen Tagen hin."
Geradezu familiär mutet es hier an manchen Tagen an. Mancher Prominenter kommt auch schon mal mit kleinen Kindern zum Essen. Da sitzen nicht selten drei Generationen an den weiß gedeckten Tischen des im Brasserie-Stil eingerichteten Restaurants und feiern Geburtstag. Auch der „normale“ Berliner gönnt es sich zu besonderen Anlässen, ins Borchardt einzukehren. Vor allem mittags ist die Schwellenangst niedriger, als beispielsweise in den Sterne-Tempeln oder den Luxushotels der Hauptstadt.
Borchardt als Hoflieferant
In den 1980er-Jahren, als das "Borchardt" noch in Ost-Berlin lag, machten hier die Bauarbeiter, die die Friedrichstraße wieder herrichteten, ihre Mittagspause. Davor hüpfte und schwitzte hier die Jugend der DDR zu flotten Rhythmen. Seit 1949 beherbergten die Räume das Fischrestaurant "Lukullus". Damals, in der Aufbruchzeit der DDR, dachte kaum jemand an die alten hochherrschaftlichen Zeiten. Schon Mitte des 19. Jahrhunderts hatte das 1853 von August F. W. Borchardt begründete Haus einen guten Ruf als Wein- und Delikatessenhandlung. Wer seinen Gästen etwas Besonderes bieten wollte, der ließ bei Borchardt kochen und sich die Delikatessen ins Haus liefern. Wie gut die schmeckten, das erfuhr auch bald der Haushalt des Kaisers. Borchardt wurde Hoflieferant."

Dhe Borchardt in Französische Straße 47 is a place where Berlin has an international, creative and cosmopolitan atmosphere. Plates clatter, glasses clink. A babble of voices and laughter. No restaurant in the capital where they are closer together: Conversations of global political importance, ideas put into words by artists and authors, flirts, skirmishes. You can't hide here. Nevertheless, Borchardt does not want to be a stage. Probably the most important restaurant of the Berlin Republic, it wants to be a normal restaurant.
Borchardt Berlin: Not lobster, but Viennese schnitzel
At least that's what the host Roland Mary stresses again and again. And anyone who has ever been to his restaurant knows what Roland Mary means. He, the jack-of-all-trades caterer, understands what's special about Berlin society: it's creative, it likes to be chic, but it's also colourful, dazzling, weird and plagued by far less resentment and snobbery than, for example, the Munich trendy crowd or Hamburg's upper class.
Champagne also flows in the Borchardts, where people eat well. But what has made the kitchen famous with its two-sided menu is not oysters or lobster, but the Wiener Schnitzel with warm potato salad. Mary herself is not a Schnitzel friend: "Schnitzel was never one of my favourite dishes", he recently announced in the newspaper Bild-Zeitung.
Good to know: The food in Borchardt doesn't cost the world. You can fill your stomach for as little as 25 euros.

Before that, the youth of the GDR jumped and sweated to lively rhythms. From 1949 the rooms housed the fish restaurant "Lukullus".
