FR Joseph Talon (1793-1873), natif du hameau de Croagnes, à Saint-Saturnin-d'Apt, eut l'idée de planter des glands, provenant des chênes truffiers, dans une de ses terres au début du xixe siècle.
Une décennie plus tard, les jeunes chênes lui donnaient une importante récolte de truffes noires. Il renouvela son expérience et comprit qu'il y avait une symbiose entre truffe et chêne. Il est à ce titre le père de la trufficulture provençale moderne.
Le succès fut au rendez-vous. Joseph Talon s’enrichit, ce fut le courtier du marché d’Apt qui vendit la mèche. Talon faisait fortune avec ses truffes. Comme tous l'avaient vu planter des glands, on l'imita. Les contreforts des monts de Vaucluse, se couvrirent de chênes, plus de 200 propriétaires étaient demandeurs et pressés. Joseph Talon vendit alors des plants truffiers, les premiers plans mycorhizés de l’histoire. Ce fut à cette époque qu'on lui attribua ce dicton, sans doute apocryphe, : « Si vous voulez récolter des truffes, semez des glands ».

La statue en pierre, au sud de la place Gambetta, sur le coté d'un escalier, nous montre Joseph Talon, un genou au sol, une truffe à la main. Au pied de la statue, une plaque gravée dans la même pierre nous dit :

EN Joseph Talon (1793-1873), a native of the hamlet of Croagnes, in Saint-Saturnin-d'Apt, had the idea of planting acorns, from truffle oaks, in one of his lands at the beginning of the 19th century. A decade later, the young oaks gave him a large harvest of black truffles. He renewed his experience and understood that there was a symbiosis between truffle and oak. As such, he is the father of modern Provençal truffle growing. Success was achieved. Joseph Talon got rich, it was the broker of the Apt market who sold the wick. Talon made a fortune with his truffles. As everyone had seen him planting acorns, he was imitated. The foothills of the Vaucluse mountains were covered with oaks, more than 200 owners were in demand and in a hurry. Joseph Talon then sold truffle plants, the first mycorrhized shots in history. It was at this time that he was attributed this saying, probably apocryphal, "If you want to harvest truffles, sow acorns".

The stone statue, south of Gambetta Square, on the side of a staircase, shows us Joseph Talon, a knee on the ground, a truffle in his hand. At the foot of the statue, a plaque engraved in the same stone tells us:
