La jeunesse plonge dans les caves, s’enivre de Be-Bop et de swing, fait tinter ses rires et ses coupes…avant de refaire le monde. Au coeur d’un Saint-Germain-des-Prés qui brille et pétille, Marc Doelnitz et Boris Vian lancent le Club Saint-Germain-des-Prés, le Bilboquet, au rythme des swings joyeux de Django Reinhardt.
Dans le décor chaleureux de bonbonnière Napoléon III , Alliant le velours rouge et le bois noir, Sartre et Simone de Beauvoir, Marguerite Duras font les beaux soirs, Billie Holliday crie son blues en virtuose, Charlie Parker, Gerry Mulligan se produisent en guest stars, Rhoda Scott, Dee Dee Bridgewater viennent « faire des bœufs », les plus brillantes formations comme les Jazz messengers, le Golden Gate Quartet réchauffent l’ambiance.
En 2017, "Le Bilboquet Rive Droite" s'est transposé au 11bis rue Volney 75002 avec, en plus, un dance floor.
