This interpretive sign stands in front of the ruins of the Kitchen and Mess hall at the Fort Lancaster state historic site outside of Sheffield, Texas.
The sign reads as follows:
"KITCHEN AND MESS HALL
Simple food, simply prepared
each company had its own dedicated kitchen and mess hall where cooks, often soldiers themselves, prepared and served meals for the enlisted soldiers. Meals revolved around limited food supplies - mostly beef, bread, and canned goods- but a garden provided some fresh foods.
“He [Captain Granger] has repeatedly made efforts for a garden: in the past season by great labor, has succeeded in supplying his men with melons, and summer vegetables to a considerable extent. But all the plants had to be watered by hand.”
