The first market built by the City of Prague was erected in the public space between the new building complexes in Rytírská and Ovocná Streets in the years 1894-1897 at a cost of 2.7 million crowns. In the passage-like market hall accessible from both these streets were over 300 stalls located among cast iron columns supporting the glassed roof. Moving of the stallholders from the open air to the market hall was no easy matter. The stallholders, mostly women, were averse to the many novelties, not to speak of the fact that the rent for the market hall stalls was by no means negligible. However, eventually the spacious hall housed the majority of the open-air stallholders from Vajecný trh (The Egg Market) in Rytírská Street.

Pocátkem devadesátých let minulého století se radní pražské obce rozhodli vybudovat na Starém Meste moderní, krytou tržnici. Duvodem bylo zlepšit hygienu a kulturu prodeje, predevším potravinárského zboží. Ten se odehrával prevážne na pražských námestích a ulicích se všemi negativními pruvodními jevy.
Místo pro budoucí tržnici bylo vybráno v Rytírské ulici, tedy v prostoru, kde stánkový prodej potravinárského zboží mel velkou tradici, vždyt tato ulice se dríve jmenovala Vajecný trh. Navíc v tesném sousedství Havelského tržište a Ovocného trhu. Radní páni tedy ctili tradici.
Vlastní halu tržnice vytvoril krytý prostor se dvema k sobe kolmými prevýšenými pasážemi a s osmibokou kopulí nad jejich krížením, vystavený s použitím litiny, oceli a skla. Plocha této tržní dvorany, zasahující i domy v ulici 28. ríjna, cinila 3 715 metru ctverecních. Pro trhovce, vetšinou z blízkého pražského okolí, zde bylo k dispozici 360 Stánku s pulty o šíri 2 metru. Navíc bylo možno ješte využít dalších 70 volných míst. Prostor byl osvetlen Križíkovými obloukovými lampami. Celý objekt byl samozrejme podsklepen a byly zde sklady a chladímy se strojovnou a vlastní parní elektrárnou.
Stavba Staromestské tržnice byla pod vedením stavitele Antonína Novotného kompletne dokoncena v únoru 1897. Náklad na stavbu dosáhl výše 2 667 704 rakouských korun. K slavnostnímu otevrení tržnice došlo v nedeli 28. února 1897. Jeho soucástí bylo i vysvecení dvorany farárem od staromestského kostela sv. Havla P. Vondruškou.
