A sign on the Flower Mound Heritage Walk provides a little history about Waketon resident, James F. Wilkinson, a local farmer whose hog-slaughter fed his neighbors.

The Flower Mound Heritage Walk is located in the Robertson's Creek Shopping Center, and can be found behind the Starbucks. Today, Waketon is part of Flower Mound, and besides Mr. Wakefield's old house (northwest of here), Waketon Road is just south of here, and there really isn't much left of Waketon otherwise. The sign says:

"James F. Wilkinson

A Grapevine native, James Wilkinson was born in 1873 to William Franklin and Judy Payne Wilkinson. In 1896 he married Ida May Grogan from Coppell, Texas. They bought a farm from H.D. Bradley on Dixon Lane near here. A three-bedroom house was already standing which James renovated for his family.

At the time the Wilkinsons bought the property, there were orchards and terraces perfect for growing fruits and vegetables. In addition they raised corn, peanuts, cotton, watermelons and cantaloupes. James and Ida were active in the local community as well. James was a Deacon in the Cumberland Presbyterian Church and Ida taught Sunday School and sang in the church choir.

After the first freeze each year, the annual Wilkinson hog-slaughter took place under an oak tree in the family yard. After heating a huge vast of water to near boiling, the hog was killed and thrown in the water and allowed to stay for several minutes. The hog was then removed, scraped of its hair and "dressed out". The meat which was not immediately eaten or distributed to neighbors who helped with the killing and processing was cured with salt and Morton's Sugar Cure. It was stored for months in the smokehouse in the backyard of the Wilkinson home and eaten throughout the year."
