A sign on the Flower Mound Heritage Walk provides a little history about Waketon resident, Andrew J. Robertson, who ran a syrup mill here.

The Flower Mound Heritage Walk is located in the Robertson's Creek Shopping Center, and can be found behind the Starbucks. Today, Waketon is part of Flower Mound, and besides Mr. Wakefield's old house (northwest of here), Waketon Road is just south of here, and there really isn't much left of Waketon otherwise. Mr. Robertson is shown in an inset, and the sign says:

Andrew Jackson Robertson, cousin of Doc Frederick Robertson, arrived in Waketon from Alabama around 1900. He owned the land which is now called Bridlewood Estates here in Flower Mound. In addition to farming, Andrew also produced sorghum syrup for himself and the community to provide needed sweetener for bland winter foods.

There was enough ribbon sugar cane growing in this area for Andrew to start up a syrup mill. The cane was stripped, cut and the ends chopped off. It was then milled by a horsepowered machine and boiled until it was sweet like sugar. Crushed cane stalks were discarded out back, allowing them to ferment. Often, pigs would get into the fermented cane stalks and gorge themselves. They would become drunk and wobble around on their sides for hours.

Syrup-making was a complicated process, and only a few people knew the technique. The mixture had to be just right otherwise the syrup would come out too dark and strong, making it inedible. With this skill, Andrew sold his and others' syrup in Dallas, charging a commission for the sale.
